30 & 31 weeks

30 weeks

How far along? 30 weeks, 3 days
Total weight gain/loss: 21 lbs
Maternity clothes? Oh ya! But proud of myself for not splurging and buying anymore for the last 4 months.
Stretch marks? Not yet, I really hope I don't get them.
Sleep: Great!!
Best moment of the week: Feeling little baby boy moving around in there.
Miss Anything? Feeling normal, just want to remember what it feels like to not have a hard basketball in my stomach.
Movement: Lots of it
Food cravings: Nothing in particular. Still love getting ice cream, and it helps with my heartburn.
Anything making you queasy or sick? Nope, other than being hungry.
Have you started to show yet? Yes
Gender: Boy
Labor Signs: Yes, some braxton hicks contractions (I think)
Belly button In or Out? Flat--just waiting for it to pop. . it looks wide! Hope it goes bakc to normal
Wedding rings on or off? On, but taking it off at night just so it doesn't get stuck.
Happy or Moody most of the time: Pretty moody not going to lie. One minute I will be laughing and happy and the next ill be crying and stressed out.
Looking forward to: The baby showers next weekend!!

31 weeks

How far along? 31 weeks, 5 days
Total weight gain/loss: +22 lbs
Maternity clothes? Yep, for sure. My pants are starting to get tight again but I refuse to buy more clothes.
Stretch marks? Not yet
Sleep: Sleeping really good, I hope this doesn't change.
Best moment of the week: Seeing all of my wonderful family on both sides for the baby showers this past weekend. Everyone was so thoughtful and we are one lucky family.
Miss Anything? Yes, being able to run and workout. I miss biking, rollerblading and basically being able to do anything around the house.
Movement: Yes and I will probably miss having him kicking around in there.
Food cravings: None
Anything making you queasy or sick? Nope, I have been pretty lucky.
Have you started to show yet? Big time, I look like I could give birth tomorrow.
Gender: Boy
Labor Signs: Yep, still having some braxton hicks contractions. Terrified to say when the first couple I have are REAL labor contractions. YIKES
Belly button In or Out? Flat
Wedding rings on or off? On
Happy or Moody most of the time: Both! Its a roller coaster. Not to mention "nesting" has hit me in full force now.
Looking forward to: Meeting baby Elfstrom and getting my body back to normal. My back is killing me lately.

There is a picture coming soon! I am now almost 34 weeks pregnant. I have been terrible at taking pictures and I know I will regret that when I look back. But I promise there is a picture coming soon!!

Spaghetti Pie

A family favorite in this household is spaghetti pie! If you have never heard of spaghetti pie, its very similar to lasagna minus the lasagna noodles and of course the layering is a little different.

  • 1 1/2 lbs. of ground beef
  • 1/2 cup of grated parmesan cheese
  • 1/2 stick of butter, melted
  • 14 oz. spaghetti sauce
  • 14 oz. spaghetti noodles
  • 1 1/2 cups of cottage cheese (I use 2% so that it doesn't get too juicy)
  • 12 oz. mozzarella shredded cheese
  • green pepper
  • onion
  • salt, pepper, onion powder, basil, oregano
  1. Chop onion and green pepper and cook until onion is translucent. Then add ground beef and brown the beef, pepper and onion together.
  2. Add the spaghetti sauce to the beef mixture once it has been completely cooked and drained. Season to taste with salt, pepper, oregano, and basil. Set aside.
  3. Cook the noodles and set aside.
  4. Combine melted butter and parmesan cheese to the cooked noodles and press into a 9x13 pan.
  5. Top spaghetti mixture with cottage cheese and spread a thin layer evenly onto of the noodles.
  6. Pour the ground beef mixture over the cottage cheese layer.
  7. Top with mozzarella cheese
  8. Bake at 350 degrees for 40 minutes.

Oatmeal Heath Cookies

These cookies are identical to the Oatmeal Trail Mix Cookies I made the other week but I substituted trail mix and added crumbled Heath bar instead. It was so good and made the cookies a little chewy (which I love!)

  • 1 1/2 cups old-fashioned oats
  • 1 cup of flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup butter, room temperature
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 tsp. pure vanilla extract
  • 1 egg
  • 1 1/4 cup of crumbled Heath

  • Directions:
    1. Heat the oven to 350 degrees. Use 2 large non-stick cookie sheets.
    2. In a small bowl, mix the oats, flour, baking soda and salt together and set aside.
    3. In a large bowl, use a mixer to cream the butter and sugars together until well-blended. Add the egg and vanilla and continue to mix on medium speed for 2-3 minutes until fluffy. Add the dry ingredients and mix just until the flour streaks are incorporated. On low speed, add the heath crumbles and mix no longer than 30 seconds.
    4. Use a small cookie scoop to portion the dough into 1-inch balls and place on the prepared baking sheet, 1-2 inches apart. Pat down the cookies gently. Bake in the oven 8-10 minutes until the edges just start to brown. Cool completely on the cookie sheet.

    Memorial Day Weekend

    First off, I hope everyone had a fantastic Memorial Weekend! A special thank you to all the men and women who serve for our country and make it possible for all of us to enjoy every waking day.

    This weekend was busy, busy, busy. We spent the weekend working on the house and on the landscaping and spending time with great people.

    Friday night we went out and celebrating on of my best friends' birthday! We went to a little bar in town called Roddy's and had fun reminiscing and celebrating. Love you Buggy!

    On Saturday, we woke up early and started the landscaping. We had so much to change around the yard that we had to get started early. We planted a lot of flowers and bushes and took our some old bushes that were dead when we moved in. Here is some of our progress.
    Don't mind the new grass that we put down in front of our new garden.
    Now we just need to add some new bushes around the trees and then if the sun would come out maybe our plants would start blooming too.
    We stopped at Home Depot a couple of times this weekend and I picked up a new indoor tree to put in our green room. It gives a nice outdoor feel on the inside. Also, we finally were able to figure out a efficient baby closet organizer that we liked and my wonderful husband assembled it this weekend for us.
    Sunday came fast for us after a long day of yard/house work. Sunday we put up some new curtains and added a little color to the house. Here is the new design for spring and summer! I love GREEN!
    After another long day of working around the house, we had a couple of our good friends Andy and Karissa over for a BBQ and some quality time. Karissa and I tried out the new car seat my Aunt gave Blake and I.
    MONDAY--MEMORIAL DAY! So grateful to have another day off of work and a long weekend, but most importantly celebrating all the men and women who fight for all of us. Today my husband worked in the yard a little more and I made some delicious cookies and spaghetti pie for a lovely couple who is coming to visit us tomorrow night.

    I will have a specific post with the recipes to the cookies and the spaghetti pie soon. This post is already getting quiet long so I will create a separate post.

    This or That?

    Hey there! Have you ever seen those books that tell you "not this" but "that", giving you options for healthy meal choices. There are books that have this or that for restaurants and food that we have at home. Below are my answers to these this or that questions. Feel free to answer your thoughts on these questions in the comments section.

    This or That?
    • Run or Work Out in the Heat and Humidity or the Freezing Cold?
    Tough question! I would have to say heat and humidity because when I run in the cold my throat hurts really bad.
    • Have Washboard Abs or Flat Abs?
    Flat Abs
    • Dr. Oz or The Doctors?
    Dr. Oz, wish his shows were on after work so I could watch it more.
    • Cardio or Strength Workouts?
    Depends on the day, but I would have to say strength.
    • Cravings: Protein or Carbs?
    Carbs. What a bummer too, I wish I could crave chicken or fish but it just doesn't happen that often. I really have to force myself to choose the healthy options.
    • Jillian Michaels or Bob Harper?
    Jillian Michaels, even though she can really get on your last nerve. I need someone who is going to push me extra hard and really get in my face.
    • Frozen Yogurt or Ice Cream?
    Frozen yogurt! Yum, now I want some.
    • Strength Training Upper Body or Lower Body?
    Upper Body--if it includes some cardio too.
    • Protein Powder or Food with Protein?
    Food with protein, never have been too much of a protein powder kind of a person.
    • Lunges or Squats?
    100% Squats. I always feel like I am doing Lunges incorrectly on my non-dominant leg, so I dislike doing them all together.
    • Sweet or Salty?
    Both! Who doesn't want a little bit of both in one meal.
    • Workout Attire: Cute or Comfy?
    Fit and cute! I don't like any baggy workout clothes.
    • Body Pump or Heavy Lifting?
    Not really a fan of either one. Body pump if I had to pick.
    • Yoga or Pilates?
    Yoga, which I rarely do. But if I am looking for something relaxing and to calm myself after a long stressful day then I may turn to yoga.
    • Favorite Fitness Brand?
    Lululemon--they have the best fitting fitness clothes ever. Spendy, but they are so worth it.
    • Running: Treadmill or Outdoors?
    Outdoors. I get so bored if I run on the treadmill. If you bring me to a beautiful lake or trail, its much easier for me to run.
    • Whole Foods or Trader Joe’s?
    This is a tough one, I really like both places for different reasons. I am going to pick Whole Foods because I feel like they have a lot more options than Trader Joe's does.
    • Summer or Winter Olympics?
    Probably the winter Olympics.
    • Exercises Classes or Exercise Videos?
    Exercise videos as they are more convenient for me. I don't have a gym membership and do a lot of workout videos.
    • Steamed veggies or roasted veggies?
    Roasted, there is nothing better than veggies roasted on the grill or in the oven. YUM!

    Hello again!

    Tonight is a crazy one. We haven't been home a lot this week so the dishes have pilled up, there is laundry to be done, and the house needs to be put back together since we completely destroyed it when we were trying to organize the nursery.

    Since there was a lot to be done around the house tonight I decided to make a quick scrambled egg dinner with a side of red peppers, avocado, and an english muffin with peanut butter. I know its random but its healthy, quick and easy!

    Light ranch dip by Marzetti is really good. I just dipped the red peppers into it for a little extra kick. I was pleasantly surprised with how good it was.
    I usually don't like breakfast for dinner, but this was an exception and definitely hit the spot. Hope everyone is enjoying their Wednesday night.
    Tomorrow I hit my 30 week mark and I am getting so excited and nervous for what's ahead. Off to bed early tonight. See ya tomorrow. 

    Cinnamon Apple Crockpot Steel Cut Oats

    Today's breakfast was quick and easily thrown together last night. Last night before bed I threw all these ingredients into the small crockpot and let them cook all night so that I could have a quick grab and go meal this morning.

    Cinnamon Apple Steel Cut Oats

    • 1/2 cup steel cut oats
    • 1 apple cut into 1/2 inch cubes
    • 1 cup of water
    • 1/2 cup milk
    • 1 tsp. of cinnamon and sugar
    • 1 Tbsp. of brown sugar
    • salt

    Cut the apple into 1/2 cubes. Combine all the ingredients and set the crockpot on low to medium (depending on your crockpot) so that the oats can cook overnight.

    I like to add about a Tbsp of peanut butter once the oats are completed and a dash more of cinnamon and sugar!
